Scrambled Egg with Tomatoes

 Scrambled Egg with Tomatoes
番茄炒蛋



Ingredients:
1 spring onion (chopped)
2 tomatoes (cut into small thicker pieces)
3 tbsp Tomato sauce
1 tsp Sugar
Water
Cornstarch water
4 eggs
Salt

Method:
1. Heat up wok, add in spring onion.
2. Add in tomatoes and fry.
3. Add in tomato sauce (for taste & color) & sugar.
4. Continue frying.
5. Add in water & keep it boil.
6. Add in cornstarch water to thicken it. Set aside.
7. Beat egg with salt.
8. Heat up clean wok, add in egg.
9. Mix quickly until it begins to solid.
10. Add in the tomatoes done early, mix well,
11. Remove & garnish with spring onion.

Steamed Egg

 Steamed Eggs
蒸蛋
 
Ingredients:
3 eggs
300ml water
1/2 tsp chicken stocks
minced garlic
1 tbsp soy sauce
Spring onion (chopped)

Method:
1. Crack eggs in a bowl.
2. Add in water and chicken stocks.
3. Steam on boiling water for 8mins with cover slightly open (do not cover fully, to get smooth egg surface)
4. Heat up oil and fry minced garlic until golden brown and set aside.
5. Remove egg, top with soy sauce & garnish with fried garlic & spring onion.

Steamed Silky Egg with Mushroom

Steamed Silky Egg with Mushroom
冬菇水蒸蛋

Ingredients:

2 chinese mushroom (soaked, shredded)
Little preserved vege (dongcai)
2 eggs
Dried Shrimps







Seasoning A:
1 tsp chicken stocks
200ml water
Dash of pepper






Seasoning B:

1 tbsp light soy sauce
1 tsp sugar
2 tbsp water





Methods:
1. Saute dried shrimps until fragrant.
2. Mix egg with mushrooms, dried shrimps & seasoning A.
3. Steam at high heat for 5mins.
4. Heat up oil, saute dongcai until dried and crispy.
5. Bring seasoning B to boil and pour onto steamed egg.
6. Sprinkle fried dongcai.

5 Ways to Cook Eggs


1. Fried Egg
- Heat up oil in pan, crack in an egg.
- Drizzle some water around the egg.
- Cover for one minute

2. Poached Egg
- Boil a pot of water.
- Slowly put in an egg and cook for 10 seconds.
- Remove the egg and pour in 1 tbsp of vinegar.
- Stir quickly to create a whirlpool
- Crack in the egg and boil for 3mins.

3. Egg Sandwich
- Crack an egg in a cup/ramekin.
- Use a fold to poke egg yolk few times
- Microwave for 45 seconds

4. Soft-boiled Egg
- Poke a hole on the top of egg shell using paper pin
- Drop the egg in boiling water and cook for 7mins.
- Remove an drop the egg into bowl of icy water for 1min.

5. Scrambled Egg
- Crack 2 eggs into a bowl.
- Add in abt 3tbsp of milk and tilt the bowl 45 degree.
- Whisk vertically to create air bubbles
- Melt some butter in a pan and pour in the egg mixture
- Cook on low heat.

Steamed Prawns with Egg

Steamed Prawns with Egg
鲜虾水蒸蛋


Ingredients:
Prawns
Egg
Chicken Essence Powder
Fried Garlic
Oyster Sauce
Sesame oil
Cooking Wine
Sugar

Steps:
1. Remove prawns head and body shells, keep the tail.
2. Slit the back of the prawn (middle part), and push the head into the opening to make a standing tail.
3. Breaks an egg, and add warm water (Egg and water ratio 1:1.5).
4. Add in some chicken essence powder.
5. Sift the egg into a steaming plate.
6. Cover the plate with food wrapper and makes few holes.
7. Add cold water into pot and put in the egg.
8. Once boiling, lower down the heat.
9. When the egg is half harden, remove the plastic food wrapper and top the egg with prawns and keep on steaming till the egg is done on lower heat.
10. Pour mixture of oyster sauce, sugar, sesame oil, cooking wine and little water on top of egg.
11. Top up with some fried garlic with oil.

2. Add in an egg.
3. Airfried at 160c for 8mins.

Sesame Oil Minced Meat Soup with Eggs
麻油枸杞荷包蛋肉粹汤



1. Marinate minced meat with soy sauce, oyster sauce, sesame oil & cornflour.
2. Shred ginger.
3. Soak wolfberries in water.
4. In the pot, add in 3tbsp of sesame oil.
5. Add in ginger and fry till fragrance.
6. Add in minced meat & continue to fry.
7. Add in water & boil.
8. Add in eggs & wolfberries & keep boiling until minced meat is cooked.

Golden Egg Fried Rice

Golden Egg Fried Rice
黄金蛋炒饭


1 bowl of white rice (preferred overnight, kept in fridge)
2-3 egg yolks (beaten)
Salt
Pepper
Spring onions

1. Heat up wok, pour in some oil.
2. Turn wok around to let oil to coat the wok evenly.
3. Pour away excess oil.
4. Add in white rice into wok, press to separate rice (do not cut)
5. Once rice start to heat up, pour in egg yolk.
6. Start to fry in speed mode to let egg yolk coat on every single rice.
7. Keep frying & add in white pepper & salt.
8. Keep frying & sprinkle spring onions when almost done.
9. Mix & serve.
