Stir Fry Black Pork

Stir Fry Black Pork
炒黑肉

Ingredients:
Pork (slice thinly)
Soy sauce
Dark soy sauce
Pepper
Sugar
Cornstarch

Method:
1. Mix all ingredients and set aside for 30mins.
2. Heat up wok with oil.
3. Add in minced meat, follow by marinated pork.
4. Add in water. Add dark sauce if color is not black enough.
5. Try the taste and may add in soy sauce/sugar/pepper.

Ginger Pork

Ginger Pork
姜丝猪肉片



Ingredients:
300gm Pork (cut into thin slice)
Minced garlic
Shredded ginger

Marinade:
2 tbsp soy sauce
1 tbsp Pepper
1 tbsp cooking wine
1 tbsp corn starch

Method:
1. Mix pork with marinade and set aside for 10mins.
2. Heat up oil and stir fry ginger in low heat until golden brown & set aside.
3. With the remaining oil, add in garlic and fry.
4. Add in pork and mix until meat turn whitish.
5. Add in half bowl of water, mix well.
6. Add in 2 tbsp soy sauce & 1 tbsp dark soy sauce.
7. Stir well & cook in high heat.
8. Once start boiling, close lid & turn to low heat & cook for 5mins.
9. Add in cornstarch water to thicken & set aside.
10. Spread fried ginger on top & garnish with spring onion.

Steamed Prawn Sauce Pork
虾酱蒸猪肉

Ingredients:
400g Pork Belly (slice thinly)
1 thumb-sized ginger (chopped)
1 spring onion white part (chopped)

Marinade:
1 tbsp Shrimp Paste
1 tbsp Cooking Wine
1 tbsp water
1/2 tbsp Oyster Sauce
1 tsp soy sauce
1/2 tsp sugar
1/2 tsp corn starch
some sesame oil
some pepper

Method:
1. Mix pork belly with all the ingredients & marinade.
2. Spread evenly on plate.
3. Steam for 8mins.

Fried Chive Flower with Shrimp Paste 
虾酱肉片炒韭菜花


Ingredients:
200gm pork belly (with skin - sliced)
250gm Chive Flower (crack with fingers/cut into pcs, throw old parts)
2 tbsp minced garlic
1 tsp prawn sauce
dark sauce
1 red chili (julienne)

Methods:
1. Marinate pork with oyster sauce, pepper, cooking oil. Follow by some cornflour (no need to marinate earlier).
2. Heat up wok. Add in minced garlic & cook till golden brown.
3. Add in pork belly. Fry.
4. Add in prawn sauce & dark sauce. Keep frying.
5. Add in chive flowers & chilli.
6. Sprinkle 3 tbsp water.
7. May taste & add in soy sauce & sugar.

Fried Pork Lard
炸猪油渣

Ingredients:
1 kg Pork Fats
1000ml water
5 pcs Ginger
1 tbsp Salt 

Methods:
1. Cut pork fats into smaller pieces.
2. Clean pork fats.
3. Put cold water into pot.
4. Add in ginger and salt.
5. Boil on high heat and remove impurities (approx. 3mins).
6. Pour away water and remove ginger.
7. Put pork fats into work and fry on medium heat.
8. Keep stirring and fry until golden brown.

9. Turn to high heat on the last 10 seconds and off heat.

Currry Pork 干咖喱猪

Dry Curry Pork
干咖喱猪

Ingredients:
300g pork belly (sliced)
1 tsp salt
1 tsp soy sauce
1 tsp curry powder

Curry leaf
4 pcs shallots
1 pc onion
Ginger slices
Garlic slices

1 tsp oyster sauce
1 tsp soy sauce
1/2 tsp chicken essence
1/2 bowl water

Method:
1. Marinate pork belly with salt, soy sauce and curry powder for 15mins.
2. Heat up wok, add in shallots, onion, ginger and garlic.
3. Add in curry leaf. Fry until golden brown.
4. Add in marinated pork.
5. Turn to low heat and keep frying until fragrance.
6. Add in oyster sauce, soy sauce, chicken essence and water.
7. Turn to medium heat until sauce thicken.

Pork Belly with Spring Onion 葱爆花肉

Pork Belly with Spring Onions
葱爆花肉

Ingredients:
400g pork belly
8pcs spring onions (cut into section)
2 onions
2 tbsp minced garlic
1 tsp minced ginger/4-5 pcs 

Seasoning:
1 tsp oyster sauce
1 tsp soy sauce
1 tsp sugar
1 tsp Shaoxing Wine
1/2 tsp dark soy sauce
1/2 tsp salt

Methods:
1. Boil water, put in pork belly and boil for 15mins.
2. Slice pork belly into preferred thickness.
3. Heat up wok with little oil, put in half garlic and cook until fragrance.
4. Add in remaining garlic and spring onions (white part) and continue frying.
5. Add in sliced pork belly.
6. Add in onion.
7. Add in all seasoning. 
8. Add in spring onion (green part) and continue with water.
9. Continue frying and dish up.

Lu Rou Fan

Lu Rou Fan
卤肉饭


Ingredients:
1 kg of pork belly
10 hard-boiled egg (shelled)
6 pieces beancurd
1 tbsp minced garlic
900ml water
50g pre-fried shallot crisps
 
Seasoning:
2 tbsp soy sauce
2 tbsp dark soy sauce
3 tbsp oyster sauce
1 tbsp sugar
dash of pepper
pinch of five spice powder
 
Method:
1. Place pork belly into boiling water and cook for 5 mins. Drain.
2. Cut pork belly in small pieces.
3. Heat up wok with 2 tbsp of oil.
4. Add in pork belly and stir for a while.
5. Add in minced garlic and continue stirring.
6. Pour in seasoning, water, hard-boiled egg & beancurd. Simmer for 50mins.
7.  Add in pre-fried shallot and mix well.

Simmered Pig Tail/Pork Trotter in Claypot

Simmered Pig Tail/Pork Trotter with Peanuts 
花生焖猪尾 / 猪手
Ingredients: 
800g pig tail/pork trotter
200g peanuts
10 cloves garlic (remove skin)
3 star anise 
 
Sauces:
1 tbsp fermented beancurd
1 tbsp dark soy sauce
1 tbsp thick soy sauce
1 tbsp oyster sauce
1 tbsp sugar
1 tbsp sesame oil
3 tbsp Shaoxing wine
1.2 litres water
 
Methods:
1. Boil half pot of water.
2. Add in peanuts and bring to boil. Reduce to low heat and simmer for about 15mins. Drain.
3. Blanch pig tail/pork trotter in boiling water over medium heat for 10mins. Drain.
4. Heat 2 tbsp of oil in claypot. Fry garlic and star anise until fragrant.
5. Add peanuts and sauce. Bring to boil and reduce to low heat and simmer for 30 mins.
6. Put in pig tail/pork trotter and simmer for 1 hour or until meat tender.

Fried Soda Cracker Meatballs

 Fried Soda Crackers Meatball
苏打饼肉丸

Ingredients:
400g minced meat
50g Carrot (minced)
3pcs Mushroom (soaked & minced)
100g Water Chestnut (minced)
5 cloves Garlic (minced)
5 pcs Shallots (minced)
6pcs Soda Crakers (crushed)
1tbsp Spring Onion
1pc Red Chilli (deseeded & minced)
 
Seasonings:
2 tsp Sugar 
1 tsp Salt
1/2tsp Five Spices Powder
1/2tsp Pepper
1/2tsp Chicken Stock Powder
2 tbsp Cornflour
1 tbsp Oyster Sauce
1 tbsp Shaoxing Wine
1/2tbsp Sesame Oil

Methods:
1. Add in all ingredients and seasonings into bowl and mix well with hands.
2. Make into meat balls.
3. Heat up oil, use mid heat and fry till golden brown.

Pork Strips in Black Vinegar Sauce

Ingredients:
300g lean pork 肉眼 (pounded, cut into strips)

Marinade:
1/2 tsp salt
1/2 tbsp Shaoxing wine

Batter (mixed):
1/2 tsp salt
1/2 tsp pepper
1 egg
2 tbsp plain flour
1 tbsp rice flour
2 tbsp oil

Sauce:
2 tbsp light soy sauce
3 tbsp tomato sauce
2 tbsp black vinegar
1 tbsp sugar
100ml water

Method:
1. Combine pork with marinade and marinate for 30mins.
2.Dip pork into batter and deep fry in hot oil until golden brown. Remove.
3. Leave 1 tbsp of oil in wok, add sauce ingredients and bring to boil.
4. Add fried pork and stir-fry over high-heat until mix well.

Spicy Stir-fried Petai with Minced Meat
虾米肉粹炒臭豆

Ingredients:
30g dried shrimps (soaked)
5 chilli padi (cut small)
1 tbsp minced garlic
100g minced meat
150g petai (rinsed & diced)

Seasonings:
1 tsp soy sauce
1 tsp oyster sauce
1/2 tsp sugar

Methods:
1. Heat up 1.5tbsp of oil.
2. Stir-fry dried shrimps, chilli padi & minced garlic.
3. Add in minced meat and fry until meat turns white.
4. Mix in petai and stir for 1 min.
5. Add in seasoning and continue to fry for a while.

Seaweed Soup

Seaweed Soup
紫菜汤

Ingredients:
Dried Seaweed
Minced Meat
Carrot (sliced)
Tofu/Japanese Tofu (sliced)
Fishballs
Egg
Fried garlic
Spring Onions

Seasonings:
Soy Sauce
Sesame oil
Pepper
Corn Flour
Chicken Essence Powder

Method:
1. Marinate minced meat with soy sauce, sesame oil, pepper and cornflour.
2. Boil a pot of water.
3. Once boiling, add in soy sauce and chicken essence.
4. Add in carrot and cook till half soften.
5. Add in minced meat little by little by pressing it flat.
6. Keep boiling for another 15mins.
7. Add in remaining ingredients - tofu, fishballs, seaweed and drop in beaten egg little by little.
8. Boil for another few mins and off heat.
9. Serve with fried garlic and garnish with spring onions.

Steamed Minced Pork with Salted Fish

Steamboat Minced Pork with Salted Fish
咸鱼蒸肉饼
Ingredients:
250g minced half-lean meat
1/2 tsp chopped garlic
1/2 tsp fried chopped garlic
30g Dan Lao salted fish (diced)
1/2 tsp shredded ginger
150ml boiling chicken broth
Spring Onion (garnish)

Seasoning:
2 tbsp supreme dark soya sauce
1/2 tsp sugar
1 tsp sesame oil
1/2 tsp cornflour

Method:
1. Mix minced pork, chopped garlic, fried chopped garlic and seasoning in a big bowl.
2. Beat several times and press into a round cake in stainless steel plate.
3. Boil a pot of water.
4. Poke a few holes with finger on the meatloaf.
5. Spread salted fish and ginger evenly onto the meat and press lightly to ensure a firm coating.
6. Pour in chicken broth and place into steamer.
7. Cover lid and steam for about 10mins.
8. Sprinkle chopped spring onion and serve hot.

Steamed Japanese Tofu with Minced Meat


Ingredients:
150g minced meat
2 japanese tofu
1 egg
1 tsp cooking wine
1 tbsp soy sauce
salt
1 tbsp steam fish soy sauce
1 tbsp sesame oil
spring onions

Method:
1. Marinade minced meat with cooking wine, soy sauce and salt and place in the center of a plate.
2. Clean, slice japanese tofu and place surrounding the meat.
3. Make a hole in the center and crack in an egg.
4. Steam over high heat for 10mins.
5. Top with steam fish soy sauce and sesame oil.
6. Garnish with chopped spring onions.

Fried Fermented Beancurd Pork Belly


Ingredients:
1.5kg pork belly
chopped garlic
fermented beancurd
1 tsp sugar
1.5 tsp salt
potato flour (地瓜粉)

Method:
1. Marinade pork belly with fermented beancurd, garlic, sugar and salt for at least 3 hours.
2. Coat pork belly with potato flour.
3. Deep fry for 15-20mins or until golden brown/cooked.
4. Remove and chop into small pieces.

Braised Pork Trotter with Peanuts & Dried Chilies






花生焖猪手

材料: 猪手 1只,花生米 250克, 黑蒜 1个(连皮拍烂), 辣椒干 6条, 清水 适量

调味料:(调味可以依照个人的口味来调哦)
蚝油 ·1汤匙,酱油 1汤匙,黑酱油 适量,盐 半茶匙, 麻油 1茶匙,酸梅酱 1汤匙, 冰糖 10克, 糯米酒 2汤匙

做法:
1)将猪手用沸水烫10分钟左右,捞起后用清水冲洗干净,沥干备用
2)烧热少许油,爆香黑蒜和辣椒干,倒入猪手翻炒至香
3)把猪手盛入锅里,注入清水,加入调味料和花生一起加盖煮沸,改用慢火焖煮40-50分钟左右至猪手松软入味,花生熟软及汁浓稠即可

Spicy & Sour Pork Trotter

Ingredients:

1 pork trotter
10-20pcs dried chillies (remove seeds, soak in water till soft)
10-20pcs shallots
1 garlic
10pcs asam piece
1 tbsp asam jawa (mix with water)
1 thumbsize ginger (smashed)
3pcs lemongrass (smashed)
5-8pcs wet sour plum
bird eyes chilies (based on preference)
water

Seasoning:
salt
sugar
soy sauce

Method:
1. Blanch pork trotter in boiling water and set aside.
2. Blend dried chilies, shallots and garlic.
3. Cook blended ingredients in hot oil until oil come out.
4. Add in pork trotter.
5. Add in asam pieces, asam juice, wet sour plum, ginger, lemongrass and water to cover the pork trotter.
6. Cook for 1-1.5hrs until soften.
7. Add in seasoning.

Airfried Prawn Paste Pork Ribs

Airfried Prawn Paste Pork Ribs
虾酱排骨
Ingredients:
400g pork ribs

Seasoning:
1 tbsp prawn paste
1 tbsp oyster sauce
1/2 tbsp Chinese cooking wine
1 tsp sesame oil
Some white pepper

Cornflour

Steps:
1. Clean and dry pork ribs with kitchen towel.
2. Poke some holes on pork ribs for easier marinate absorption.
3. Marinate pork ribs with seasoning and set aside for at least 10mins or overnight.
4. Coat pork ribs with cornflour.
5. Lay pork ribs on basket net and brush/spray some oil.
6. Airfried at 160c, 20mins.
