Curry Shark Meat
咖喱鲨鱼肉
Ingredients:
Shark Meat
Ginger (julienne)
2 cloves Garlic (minced)
1 onion (diced)
1 pc Chilli/Chilli Padi (cut into pieces)
Seasonings:
Taucu, Curry Powder, Dark Soy Sauce, Oyster Sauce
Methods:
1. Clean and cut shark meat into smaller pieces.
2. Heat up wok and fry ginger and garlic then add in onion and chilli.
3. Add in shark meat.
4. Add in seasoning and keep frying. (may add little water)

Steamed Scallops with Vermicelli
Steamed Scallops with Vermicelli
粉丝蒸扇贝
Ingredients:
Minced garlic
Minced ginger
Minced chilli
Vermicelli (soak and cut short)
Scallops (cleaned)
Fish steam sauce
Scallions (cut)
Methods:
1. Fry minced garlic & ginger, add in chili and fry until golden brown and set aside.
2. Remove scallops from shell.
3. Arrange vermicelli onto shell.
4. Top with scallops and arrange on steaming plate.
5. Drizzle with fried garlic & ginger.
6. Steam on high heat for 5mins.
7. Remove and drizzle 'fish steaming sauce'.
8. Top with scallions.

Curry Squid
Squid (washed & cut)
Baba's Fish Curry Powder
Curry leaf
Shallots (sliced)
Garlic (Minced)
Onions (Diced)
Sugar
Salt
1. Heat up some oil, fry shallots and garlic till fragrance.
2. Add in curry powder and curry leaf and keep stirring.
3. Add in water and bring to boil.
4. Add in squids (do not overcook)
5. Add in seasoning - sugar and salt.
6. Off heat and serve.

Fried Sotong
Ingredients:
360g Squid
Marinade:
1 tsp salt
1 tsp castor sugar
1/4tsp pepper
1/4tsp five spice powder
2 tsp curry powder
1 egg white
1 tbsp plain flour
corn flour
Method:
1. Clean squid and cut into small pieces.
2. Marinade and cover squid for at least 2 hours.
3. Coat with some corn flour and fry. Serve.

Airfried/Grilled Teriyaki Mackerel
日式烤鲭鱼
Ingredients:
1 pc Mackerel (usually frozen - thaw, clean, dry and make few slices on meat)
Sauce:
Teriyaki sauce
OR
1 tsp fish sauce
2 tsp first drawn soya sauce (or premium soya sauce)
1 tsp sesame oil
1 tbsp Chinese cooking wine
Steps:
1. Set airfyer to 200c, 12mins.
2. Place mackerel into pan.
3. After 2 mins, apply sauce with brush onto markerel.
4. Continue to airfry and carry on to apply the sauce until the fish gets dry on both sides.
5. Once done, serve warm.

Soy Glazed Garlic Shrimp
Ingredients:
12 prawns (head removed and devein with shell on)
12 cloves garlic (peeled & pounded/minced)
1 tbsp cornflour
1 tsp red pepper flakes / powder
3 tbsp butter
1 tbsp cooking oil
1 tbsp white wine (optional)
Sauce:
1 tsp fish sauce
1 tbsp soy sauce
1 tbsp sugar
Chopped spring onion / coriander
Black pepper
Lemon
Instructions:
1. Mix corn flour with red pepper flakes. Toss with shrimp evenly and set aside.
2. In pan, add in butter and olive oil. Turn on heat to medium.
3. Once butter almost melted, add in garlic and cook over low medium heat until golden and crispy but not burnt. Remove and set aside.
4. Turn up high heat and add in prawns. Cook for 30seconds before adding white wine.
5. When shrimps start to turn pink, add in sauce and mix evenly.
6. Cook for another minute and add in fried garlic and black pepper.
7. Toss well and turn off heat.
8. Squeeze lemon juice and sprinkle chopped spring onion and coriander. Serve.

Mussels
Garlic (minced)
Mozarella cheese
Butter
Oyster Sauce
Salt
Mixed herbs
Steps:
1. Marinate mussels with oyster sauce, salt and mix herbs. Put aside for 1 hour.
2. Fry garlic with butter and set aside.
3. Put fried garlic butter as topping of mussels and followed by mozarella cheese.
4. Airfried for 160c, 8mins.

Steamed Prawns with Egg
鲜虾水蒸蛋
Ingredients:
Prawns
Egg
Chicken Essence Powder
Fried Garlic
Oyster Sauce
Sesame oil
Cooking Wine
Sugar
Steps:
1. Remove prawns head and body shells, keep the tail.
2. Slit the back of the prawn (middle part), and push the head into the opening to make a standing tail.
3. Breaks an egg, and add warm water (Egg and water ratio 1:1.5).
4. Add in some chicken essence powder.
5. Sift the egg into a steaming plate.
6. Cover the plate with food wrapper and makes few holes.
7. Add cold water into pot and put in the egg.
8. Once boiling, lower down the heat.
9. When the egg is half harden, remove the plastic food wrapper and top the egg with prawns and keep on steaming till the egg is done on lower heat.
10. Pour mixture of oyster sauce, sugar, sesame oil, cooking wine and little water on top of egg.
11. Top up with some fried garlic with oil.

Seafood Aglio Olio
Spaghetti
Olive oil
Butter
10-12 prawns
2 squids
10 cloves garlic (peeled & chopped)
2 chili padi (sliced)
Parsley (chopped)
Sea salt
Freshly grounded black pepper
1. Cook spaghetti & set aside.
2. Remove prawns shells.
3. Add in the shells into a pot with 150ml water & boil for 3-5mins to make prawn stocks.
4. Heat some butter in sauce pan & cook prawn on both sides & set aside.
5. Cook squids (like prawn) & set aside.
6. Add in olive oil, cook garlic & chili padi until garlic turn brown & turn off stove.
7. Add in spaghetti, 2tbsp of prawn stock, parsley & butter into the garlic & chili padi.
8. Stir evenly & serve.
Assam Prawn
Tamarind paste
1/2kg prawn (to remove head - optional)
1tsp salt
1tsp sugar
1tsp dark soy sauce
1/2tsp white pepper powder
1. Marinate all for 2 hours.
2. Heat pan, medium heat, cook prawn till crispy, caramelised & aromatic.

Thai Style Steamed Fish
Fish
1 lime - green (press out juice)
Minced:
3 cloves garlic
2 small chillies
1 plant of coriander
Sauce:
1 tbsp fish sauce
1 tbsp water
1 tbsp sugar
1. Boil water. Place fish on rack and steam for 6mins.
2. Remove fish and pour away water from fish.
3. Add in sauce & minced ingredient to fish.
4. Steam on high heat for 1-2mins.
5. Remove and add in lime juice.

Seafood Garlic Fried Rice
- 1.5 cup of rice for 2 person
- 2 large eggs
- prawns (you can also add squid or other seafood)
- scallops(optional)
- 8 bulb of garlic, chopped or cut in slices
- 1 red onion, finely chopped
- 1 tablespoon of soya sauce, some salt & pepper
- 3-4 tablespoon of cooking oil
- heat up cooking oil
- fry garlic till a shade before golden brown, remove and set aside
- using the same oil, fry prawns (with a dash of salt), then remove and set aside
- sear scallops with shells on, then remove and set aside
- with the same oil, fry eggs till 80% cooked
- add rice, and stir for a minute
- add soya sauce, salt, and some pepper
- add garlic and continue to stir for another minute
- add garlic and prawns, stir for another minute
- serve while hot (arrange your scallops with best of your artistic ability)
