Seafood Pasta

Seafood Pasta 

Chopped Garlic
Chopped Onion
Seafood - Squids/Prawn/etc.
Kewpie Seafood Sauce
Spaghetti
Broccoli

1. Cook spaghetti as usual and set aside.
2. Heat up some oil, fry garlic & onion until fragrant but not brown.
3. Add in seafood and mix well.
4. Add in cooked spaghetti, broccoli and sauce.
5. Stir well.

Spaghetti alle Vongole

Spaghetti alle Vongole

Ingredients:
1kg of clams
Spaghetti/Linguine
2 tbsp butter
Dried chilli flakes
2 cloves of garlic (sliced)
2 cups of white wine (preferred Bianco brand)
salt & black pepper
bunch of Italian parsley (chopped)

Method:
1. Wash and scrub clams in a large bowl of salted water to purge out the sand from the clams.
2. Boil a large pot of water and add 3-4 tsp of salt when water is bubbling. Cook until pasta is done and set aside.
3. In a large pan, melt butter and add in chilli flakes and garlic.
4. Once aromatic smells released, add in clams and white wine. Keep the heat high.
5. Cover pan for 2mins or until clams are opened.
    *Do not overcook the clams.
6. You can choose to remove the clams or just leave them inside while you add in the pasta.
7. Add in some pasta water and keep high heat and toss the pasta well.
8. Garnish with parsley.

Clams & White Wine Linguine with Pesto Sauce

青醬白酒蛤蠣義大利麵


Bunch of linguine
12-15 clams
1/4 cup of white wine
1 tbsp pesto sauce (refer recipe for pesto sauce)
3 cloves of garlic (minced)
1/2 onion (slice)
1 small chilli (minced)
Olive oil
Salt
Pepper

1. Add in olive oil, salt & linguine into boiling water & cook for 12mins. Set aside.
2. In a pan, fry garlic, onion & chilli till fragrant.
3. Add in clam & white wine, boil & add in pesto sauce.
4. Add in linguine, sprinkle pepper & salt and mix together.

Spicy Garlic Potato Spaghetti

Spicy Garlic Spaghetti with Potato Cubes
香蒜辣椒意大利面


Spaghetti , portion for 2
Garlic (cut into slices) 10 cloves
Dried chilli (soak with hot water)4
Ikan bilis 
Bacon (cut into small pieces) 2 slices
Potatoes 1 (cut into pieces, add in some salt, mixed herbs and paprika, and fry till cooked)
Mixed herbs
Chicken stock powder/Salt

1. Cook the spaghetti according to the package instruction. Mix with olive oil and put aside. (reserve 4Tbsp of the water from cooking spaghetti for use later)
2. Heat 4Tbsp of olive oil in a pan, put in garlic, fry till golden brown in colour, add in the ikan bilis and bacon, fry till cooked and fragrant, then add in the dried chilli and cooked potatoes, fry till combine.
3. Add in the spaghetti, continue frying, you can add in the spaghetti water if it's too dry, put some chicken stock powder/salt as seasoning and sprinkle with some mixed herbs.
