Japanese Tofu with Minced Meat

Japanese Tofu with Minced Meat

Ingredients:
Japanese Tofu
Minced Meat
Soy Sauce
Oyster Sauce
Cornflour
Egg
Spicy fermented bean paste
Minced garlic
Minced shallots
Spring onion

Methods:
1. Marinate minced meat with soy sauce, oyster sauce & cornflour for 10mins.
2. Mix an egg with cornflour.
3. Cut tofu into pieces & soak into egg mixture.
4. Heat up wok and fry tofu on both sides till golden brown & set aside.
5. Heat up oil and fry garlic & shallots.
6. Add in minced meat & fry till cooked.
7. Add in bean paste and water.
8. Add in soy sauce to taste.
9. Add in fried tofu and keep boiling.
10. Dish up and garnish with spring onion.

Mapo Tofu

 Mapo Tofu
麻婆豆腐

Ingredients:
150g minced pork
1 pc soft tofu (diced)
4 chilli padi (deseeded, chopped)
3 shallots (peeled, chopped)
1 tbsp minced garlic
1 tbsp minced ginger

Marinade:
1 tsp soy sauce
1 tbsp Chinese cooking wine
1 tsp cornflour

Seasoning:
1.5 tbsp chilli bean paste (Taucheo)
1 tbsp soy sauce
1 tbsp Chinese cooking wine
1 tbsp sesame oil
1/2 tsp chicken stock granules 200ml water

Spring onion (chopped)

Method:
1. Marinade minced meat and keep aside for 30mins.
2. Heat up wok with 1 tbsp of oil, add in minced meat, fry well and dish up.
3. Heat up wok with 1 tbsp of oil, add in remaining ingredients (except tofu)
4. Add in chili bean sauce and fry well.
5. Add in remaining seasoning and tofu.
6. Bring to boil and lower the heat, simmer for 5mins.
7. Remove and garnish with spring onions.

Thai Style Tofu

Thai Style Tofu
泰式炸豆腐

Ingredients:
4 pcs tofu (cut into small pieces)
1 cucumber
1 carrot
2 onions
3-4pcs chillies
cornflour
sesame (optional - roast)

Sauce:
5 tbsp Thai Sauce
2 tbsp tomato sauce
1 tbsp lemon/lime juice
sugar

Method:
1. Cucumber, carrot, onions & chillies cut into strips.
2. Mix all ingredients for sauce and put aside.
3. Dip tofu with cornflour and fried until golden brown.
4. Arrange tofu on plate, garnish with all vegetables and pour sauce on top.
5. Garnish with some sesame.

Steamed Tofu and Egg with Minced Meat
肉末豆腐蒸蛋

Ingredient A
Half bowl of minced meat
2 tbsp soy sauce
1 tsp salt
1 tbsp cornflour
1 tbsp cooking wine

Ingredient B
2 eggs
1 tsp salt
water

1 box of tofu
Spring onion

1. Mix ingredient A & marinate for at least 10mins.
2. Mix ingredient B, add in same amount of water and mix together.
3. Cut tofu into pieces and arrange on steaming plate.
4. Pour egg mixture into the plate.
6. Cover with plastic food wrap and prick few holes.
7. Steam on high heat for 12mins.
8. In frying wok, add in oil and fry No.1 until cooked.
9. Pour on top of egg & tofu and continue to steam for another 2mins.
10. Remove from heat, sprinkle some soy sauce & sesame oil and spring onions.

Fried Tofu with Thai Sauce
泰式豆腐

1. Wash and dry the tofu with kitchen towel.
2. Cut into small pieces.
3. Sprinkle some salt and cornflour.
4. Fried with oil until golden brown OR airfried at 180c for 18mins.
6. Remove and set aside.
7. Cut some cucumber and onions.
8. Arrange on top of tofu.
9. Pour in thai sauce.

Sizzling Tofu with Minced Meat

Sizzling Tofu with Minced Meat
铁板豆腐



2 japanese tofu
100gm minced meat
2 Shiitake mushroom (soaked, shredded)
1 tbsp salted bean paste
1 tsp chopped garlic
100ml water
Cornflour (mix with water for thickening)
40gm salted fish (diced  deep fry)
1 tbsp spring onions
1 tbsp Shaoxing wine

1 egg (beaten)

1. Cut tofu into pieces, deep-fry and remove.
2. Heat up 1 tbsp oil in hot wok, saute chopped garlic until fragrant.
3. Add in salted bean paste, minced meat, mushroom & stir well.
4. Add in water and seasoning, bring to boil & simmer for a while.
5. Thicken with cornflour solutions.
6. Preheat sizzling plate/pot with 1tbsp of oil and add in beaten egg.
7. Spoon in minced meat, sauce & tofu onto egg & sprinkle with fried salted fish.
8. Splash Shaoxing wine & serve.

Char Choy Tofu Soup

Char Choy Tofu Soup
榨菜豆腐汤



1 ball char choy (rinsed, sliced & soaked in water for 30mins, drained)
2 chicken bone
1 tomato (quartered)
1 carrot (cut into pieces)
1500ml water

1 block soft tofu (cut into 2 x 2cm)


1. Heat a pot of water. Scald chicken bone, drain well.
2. Place all ingredient (except tofu) into pot. Bring water to boil.
3. Turn heat to low, simmer for one hour.
4. Add in tofu & turn off heat
