Spongy Banana Walnut Cake

Spongy Banana Walnut Cake

Ingredients:
3 medium egg
130g sugar
200g ripe banana (cut into small pieces)
150g cake flour
1/2 tsp baking powder
1/4 tsp baking soda
100g corn oil
1/8 tsp vanilla rum (optional)

handful of walnut (optional - bake, remove skin and crush into small pieces)

8" round tin / 7" square tin

Methods:
1. Preheat oven at 160g.
2. Grease & line tin with baking paper.
3. Sieve flour, baking powder & baking soda together, set aside.
4. Beat eggs, sugar, banana & rum at max speed with mixer until stiff / ribbon stage.
5. Fold in flour & mix well.
6. Add in corn oil & mix well till batter is shiny & flowing.
7. Pour into cake tin and top with walnut.
8. Bake for 40 - 45mins.
